Bold Rock Flank Steak with Cider Glaze, Coconut Rice, and Grilled Corn

Sure to be one of your favorite dishes this summer. The sweet-and-spicy jerk marinade and cider glaze is balanced by the coconut rice and Bold Rock draft.

Ingredients

For Cider Glaze (optional):
  • 1 Cup Bold Rock Draft Amber Cider
  • 1/4 Cup Honey
  • 1 Tbsp. Jerk Seasoning
  • pinch of salt
For coconut rice:
  • wild rice
  • coconut milk

Instructions

  • 1. Marinade flank steak 1 hour (or overnight if desired)

  • 2. Grill to Medium-Rare (recommended method): Heat grill to high heat. Salt and pepper liberally on both sides of steak. Place steak on grill at a 45* angle turn down heat to medium. After 5 minutes, rotate steak 90* to an open space on the grill to make picture-perfect diamond markings. After 5 minutes, flip steak and repeat. Depending on thickness of steak, after these steps steak should be medium rare (use a meat thermometer horizontally inserted to check for internal temperature of 145*F). Remove from heat and let steak rest for 4 minutes before slicing. Thin slices (1/4") against the grain help contribute to tenderness - thicker slices will be tough! (Skip to step 4)

  • 3. Stovetop Sear (alternative cooking method): Set pan to medium-high heat. Add 1 Tbsp oil to pan. Salt and pepper both sides of steak liberally. Carefully lay the steaks into the pan, making sure to set it in the pan away from you to prevent oil splash. Turn down heat to medium. Don't move the steak around after setting it into the pan, leave it for 7 minutes on each side to achieve an amazing seared crust. Check internal temperature with meat thermometer to ensure 145*F for medium-rare. Remove from heat and let rest for 4 minutes before slicing. Thin slices (1/4") against the grain help contribute to tenderness - thick slices will be tough! 

  • 4. Cider Glaze: While steaks are cooking, combine 1 Cup Bold Rock Draft Amber Cider, 1/4 Cup honey, 1 Tbsp. jerk seasoning, pinch of salt. If preparing steak on stovetop pan, add these ingredients to the pan after the steak has been taken out and scrape off all the stuck-on-goodness from the pan into the glaze. If preparing by grill, add ingredients into a small sauce pan. Heat on high and let reduce until it reaches desired consistency. Pour over sliced steak.

  • 5. Prepare 1.5 cups wild rice as per instructions on container. Substitute 1/4 cup recommended liquid for 1/2 of 13.5oz can of coconut milk. Add pinch of salt. 
  • 6. Grill corn to desired doneness & enjoy with a Bold Rock Draft Cider (or preferred variety of Bold Rock Cider)
